OUR REVIEW ON SHIMBASHI SOBA SINGAPORE

I recently visited Shimbashi Soba at Paragon and came away genuinely surprised by just how good quality soba can be outside of Japan. The noodles are made in-house daily using Tasmanian buckwheat flour and crafted following the traditional san‑tate method: freshly milled, freshly made, and freshly cooked. The result? A bowl of soba that’s springy yet tender, with a clean, nutty bite that carried through even after finishing the noodles. I opted for the Tenchirashi Soba, featuring a mountain of crispy tempura and a perfectly poached egg atop chilled soba—light, flavoured just right, and utterly satisfying without feeling heavy.

Service here was thoughtful and efficient: from timely table sanitization to staff refilling broth when it ran low, I felt well cared for throughout the meal. In addition to the Tenchirashi, I also tried the Beef Tsukemen Seiro—cold soba served with a warm, flavourful broth loaded with beef slices, mushrooms, carrots, radish, and a soft-boiled egg—an inspired take on tsukemen that delivered both texture and depth. To finish things off, the Soba Cha Cream Mochi with Buckwheat Soft Serve was a creative and refreshing dessert—matcha-like chilliness paired with chewy mochi and crisp rice puffs—perfectly balancing richness and refreshment.

While the prices (around S$16–22 for soba bowls, S$5–9 for desserts) are on the higher side compared to casual Japanese eateries, the quality and craftsmanship make it worth it for soba lovers. Some reviewers do note that the dipping broth can occasionally tip toward the salty side, but the option to pair with refreshing buckwheat tea helps balance it out. As Reddit users point out, despite newer soba chains in Singapore, Shimbashi remains one of the most consistent destinations for handmade soba—especially cold soba paired with light, crispy tempura that feels clean and expertly executed. For a light, refreshing, and genuine soba meal in a calm, minimalist Japanese-style setting, Shimbashi Soba is definitely worth the trip.
