OUR REVIEW ON BINOMIO SINGAPORE
I recently dined at Binomio Spanish Restaurante after its elegant move to Raffles Hotel’s Arcade, and the experience felt like a vibrant rebirth of this beloved Spanish institution. From the moment I stepped into the space—designed with deep cobalt blues, brass finishes, and gold-leaf accents by Sevillian artist Fernando Oriol—it felt like walking into an artful fusion of an Iberian gallery and upscale tapas lounge. The outdoor alfresco tapas bar provided a breezy, social vibe—perfect for sharing croquetas and sipping cava—while the fine dining room at the back offered a quieter, more intimate setting complete with a glass‑walled wine room lined with Spanish bottles.
We began with a flight of croquetas—mushroom, cod, truffle, and the house‑special Binomio version made with Iberico ham and chicken—that were crisp outside and luxuriously creamy within. The Ensaladilla de gambas y encurtidos (prawn‑potato salad with pickles and capers) struck the right note of tangy, briny brightness, while the Bienmesabe de lubina (fried sea bass bites) delivered golden crunch and flaky richness that utterly delighted the palate.
For our main course we shared the Fideuà de pato, a paella‑style dish made with toasted angel‑hair pasta, seared duck, maitake mushrooms, and garlic aioli—it had a smoky depth reminiscent of wok hei but pulled off delicately with finesse.
