OUR REVIEW ON ASU SINGAPORE

I recently dined at ASU—Chef Ace Tan’s intriguing new venture tucked away in the lush heritage bungalow at Labrador Nature Reserve—and it truly felt like stepping into a chef’s theater. The star-shaped, semi-circular chef’s table offers a direct front-row view of the open kitchen, where sparks fly, sauces drizzle, and every plate feels like part of a live culinary show. The space itself exudes minimalist elegance—soft, warm lighting, recycled timber surfaces, subtle Oriental artworks, and an intimate atmosphere that perfectly sets the stage for an evening of refined exploration.

The food is a modern tribute to Asian heritage, presented as a thought-provoking tasting menu (S$168++ per person, with optional supplements) that melds personal memories, Traditional Chinese Medicine wisdom, and global techniques. Highlights included the delicate Crystal Dumpling stuffed with lobster and pickled bamboo—its cracker-like shell was both playful and ingenious —and the buttery, smoky Wagyu Rawon, a silky take on Indonesian beef stew that truly stood out. The meal ended on a high note with desserts like Hitam Koji (makgeolli-infused fermented rice pudding) and Yuan Yang (a kombucha-coffee sherbet crowned with milk tea foam and chicken floss) that were as nourishing as they were creative.

Overall, ASU delivers a journey of progressive Asian cuisine that’s equal parts soul and spectacle. It’s not just about eating—you’re observing, engaging, and discovering flavors rooted in tradition yet reimagined for today. While the menu is thoughtful and occasionally subtle, the emotional storytelling and immersive presentation make each course linger long after the evening ends. If you’re seeking dining that blends heart, heritage, and theatrical flair, this one’s a gem worth the journey—and the splurge.
